Easy, Vegan Microwave Cake in a Mug
Here is my sweet and simple recipe for an easy cake in a mug made in a microwave.
This recipe is perfect for afternoon dessert in front of the TV watching The Great British Bake Off, or enjoying the sun outside and sipping tea!
With mug cakes you can experiment with lots of different toppings and flavours of your choice, so go wild! My two favourite types of mug cakes to make are The Golden Cinnamon Sponge and Gooey Chocolate Surprise!
All you will need is a mug, spoon for eating and stirring, and a microwave!
Ingredients:
4 tablespoons of self-raising flour
1 tablespoon of agave or sugar
3 tablespoons of soya milk
2 tablespoons of vegetable or sunflower oil
pinch of salt
Good shake of cinnamon (if you are making The Golden Cinnamon Sponge)
Sultanas (if you are making The Golden Cinnamon Sponge)
Chocolate bar broken into chunks and pushed into the batter before putting into the microwave (for Gooey Chocolate Surprise)
1 teaspoon of vanilla (optional for The Golden Cinnamon Sponge)
Toppings:
Chocolate spread or melted chocolate (if you are making Gooey Chocolate Surprise version)
Agave, maple or any syrup (if you are making The Golden Cinnamon Sponge)
Method:
Add all of your dry ingretdiantes into a mug and give a good stir.
Add all of your wet ingredients and combined until a thick batter forms.
Microwave on high for 2—2 1/2 minutes, or until the batter on the top feels done. Remember! Your cake will keep cooking for about 30 seconds after taking it out of the microwave, so keep this in mind.
Leave to cool or spread your toppings straight on!
The Golden Cinnamon Sponge topping: poke holes in the top of the sponge and drizzle with agave. Add an extra sprinkle of cinnamon for a garnish!
Gooey Chocolate Surprise: Spoon chocolate spread or melted chocolate on top of your sponge and spread all over the top. Add some crushed nuts for a garnish!
